Countrywise Country Cookbook

The new Countrywise Country Cookbook is full of delicious recipes, using the finest ingredients from our countryside.

Countrywise Kitchen proved one of the most popular food series of 2010, with viewing figures hitting 4 million when it aired on ITV1 primetime. Now for the first time, its co-presenter and chef Mike Robinson brings you the best recipes of the 2010 and 2011 series - plus dishes from its sister show Countrywise.

The book features more than 100 recipes for cooking with country ingredients, from partridge to chicken, lamb to pork, salmon to mackerel, blackberries to plums. With sumptuous recipes including Beef Suet Pudding, Partridge Casserole, Dover Sole with Brown Shrimp Butter, Roast Loin of Pork and mouth-watering desserts like Gooseberry Fool with Homemade Shortbread and Sweet Cherry Pie, there is a delicious recipe here for every cook to want to try at home.

All recipes are simple to prepare and Mike offers lots of advice and information on how to find top-quality ingredients, what to ask your butcher, fishmonger or grocer, and hints and tips on cooking techniques such as braising and barbecuing, eating seasonally and foraging. The Country Cookbook is an invaluable source of information as well as a delightful collection of recipes.

Mike Robinson is co-presenter of ITV1's primetime series Countrywise and Countrywise Kitchen. As one of the country's top game cooks, Mike's passion for game cooking is reflected in his country pub, The Pot Kiln in Frilsham (Berkshire), where you will find the best of the seasonal local Berkshire game - that Mike has stalked himself - on the menu. He also runs the Mike Robinson Game & Wild Food Cookery School and is co-owner of the Michelin-starred London pub, The Harwood Arms.

A new series of Countrywise Kitchen has been commissioned for ITV1, to air this autumn. Stunning photographs by celebrated photographer Kristin Perers (was photographer for The Ginger Pig Meat Book) have been specially commissioned to accompany the recipes.

A Christmas 2011 series of Countrywise Kitchen has just been commissioned to run on ITV1 this December in the run up to Christmas

A new series of Countrywise Kitchen will be shown on ITV1 in February 2012.
