Place the lamb in a roasting tin and using a knife, pierce the shoulder all over. Drain the anchovies and cut each fillet into three, then stuff a piece inside each hole along with a sliver of garlic and a few leaves of rosemary. Season the lamb generously all over and drizzle with oil, then cover with foil and place in the oven for 2 hours. Meanwhile halve the new potatoes and silver skin onions. * Add the potatoes to the lamb tray, turn the oven up to 200°C / 180°C fan / Gas 6 and roast for 30 minutes until starting to brown. Next add the broad beans, peas, white wine and silver skin onions and return to the oven for a further half an hour. * Remove from the oven, crumble the feta cheese over, scatter over the mint and serve. Ingredients: * 125g Unsalted Butter, softened * 75g Caster Sugar * 2 large Eggs * 125g Self-Raising Flour * 1 tsp Baking Powder * 50g Opies Cocktail Cherries, chopped For the buttercream icing: * 150g Unsalted Butter, diced * 300g Icing Sugar * 1/2 tsp Vanilla Extract * Pinch of Salt To decorate: * Pink decorating sugar * 16 White Marshmallows * 32 Edible Eyes * 16 White Mini Marshmal- lows, halved widthways * 8 Opies Cocktail Cherries, halved Method * Pre-heat the oven to 190°C / fan 170°C / gas 5 and divide 16 paper cases between 2 muffin tins. * Beat the butter and sugar together until pale and creamy, then gradually add in the eggs until thoroughly combined. * Fold in the flour, baking powder and cherries and divide the mixture between the cases. Bake in the oven for 15-20 minutes until golden and firm. Transfer to a wire rack to cool. * Meanwhile make the buttercream. Place the butter, icing sugar and vanilla extract in a bowl or stand mixer and beat well until light and fluffy. Add a pinch of salt and give one final stir. * Pipe icing over the cupcakes, then halve the larger white marshmallows at a diagonal angle. Empty the pink decorating sugar into a shallow dish, then dip the cut-side of each marsh- mallow into the sugar so the cut edge gets a good coating. Posi- tion two marshmallow halves upright per cake to make the bunny ears. * Pop two edible eyes into position, then lightly press a cocktail cherry half into the icing for the nose and finally two white marshmallow halves underneath for the mouth. LINCOLNSHIRE TODAY 53 F irst becoming operational in May 1994, and since responding to over 28,500 missions, Lincs & Notts Air Ambulance (LNAA) is celebrating its 30th anniversary this year. Its pilots, doctors and paramedics provide the very best pre-hospital emergency care possible to some of the most seriously ill and injured people in Lincolnshire and Nottinghamshire. In 2023 the LNAA experienced its busiest year on record, responding to 1,771 missions, and 2024 has continued this trend with the charity being called to 281 missions in the first two months. CEO Karen Jobling said: “Each year the number of missions we attend increases. Last year we responded to 151 more missions than in 2022, treating critically ill and injured patients across Lincolnshire and Nottinghamshire.” Caring for a patient does not stop when the doctors and paramedics transfer them to hospital, either. LNAA’s Aftercare Team continued to grow from strength to strength and the team reached out to 916 patients and/or their families during 2023. From providing support and arranging 58 visits to HQ to being a listening ear, the team helped many patients come to terms with their injuries and cope with the impact of what happened to them. On average the LNAA teams respond to four missions per day, attending patients needing a range of life-saving treatments including blood transfusions, emergency anaesthetics, surgical procedures and life-saving drugs. Karen added: “2024 is the 30th anniversary for Lincs & Notts Air Ambulance and we have ambitious plans for the year so that we can be by the side of more patients. As a charity, we receive no direct government funding for our operations and we rely on the support of every community in Lincolnshire and Nottinghamshire for the £10 million needed to operate 24 hours of the day, every day of the year. The charity’s aim is to cover the whole of Lincolnshire and Nottinghamshire with hundreds of yellow helicopters and spread the message about their life-saving work. And they need knitters and crocheters to help create this mammoth masterpiece. There are three ways people can take part. Individual knitters can create a single mini helicopter and display it in a local shop, pub, church, or other community space. More adventurous knitters are being asked to let their imagination soar and design a unique, eye-catching postbox topper, including, of course, a yellow knitted helicopter! Or the ultimate challenge is to yarn bomb your community and join forces with fellow knitters to create a cornucopia of colour. LNAA’s volunteer manager, Kate Kerrigan said: “It is so easy to get involved. Last year, George was walking with his mum, Laura, and sister in Market Rasen, when he suddenly tripped and fell into the path of an oncoming car. The LNAA were called and after landing at a cricket ground on the outskirts of the town, the crew were soon by George’s side. The toddler was regaining consciousness and becoming distressed, so Dr Alan gave him pain relief and oxygen. After stabilising George, Alan decided he needed to be taken to Nottingham Queen’s Medical Centre (QMC) for further assessments. Luckily, George’s injuries were not too serious, and he was soon home. But the family struggled to get over the accident. George’s sister became anxious when crossing the road. She wouldn’t settle at night without her mum, for fear Laura may go away again with George and not come home. George refused to walk and would only go out if carried or pushed in a buggy. The family only started to overcome their anxieties when they were invited by LNAA’s Aftercare Team to visit headquarters to meet the crew who treated George. Eight months after the accident George is back to normal. His sister still gets anxious but no longer worries that her brother could be hit by a car when they are out walking. This discriminatory attitude not only denies the elderly access to essential mental health services but also perpetuates a harmful cycle of prejudice that affects families, communities, and public services alike. A new study conducted by the Centre for Mental Health has precipitated several high-profile calls for older generations to receive the same level of concern and attention as their younger counterparts. The report highlights the alarming repercussions of dismissing mental health worries, with it not only affecting the individual’s wellbeing, but also placing unnecessary pressures on the wider community to pick up the slack. This biased treatment has fostered a pervasive sense of pessimism among older individuals, normalizing poor mental health as an inevitable part of aging.
