Snacking Giant Scotch Eggs with Pickled Walnuts Method: * Hard-boil 4 of the eggs for approximately 8 minutes, leaving the yolks a little soft, cool immediately in cold running water. * In a large bowl combine the sausage meat, Opies Pickled Walnuts and parsley, season with salt and pepper. * Peel the hard-boiled eggs, then divide the sausage meat mixture in 4 and wrap around the eggs creating a tight seal. * Season the flour and place on a shallow plate. Beat the remaining egg in a separate shallow dish. Place the panko breadcrumbs in another shallow bowl. * Roll each egg first in flour, then egg and finally roll in breadcrumbs, place on a plate in the fridge to chill for about half an hour. * Heat oil to 170°C and deep fry for 10 - 12 minutes until golden brown. Hints and Tips: When the eggs are cooked they should float to the top of the oil. Add to a sharing platter to enjoy with friends, also perfect for a picnic treat. Divide equally, measuring across the shortest edge, into 3 rectangles 23cm x 12cm (approximately). * Spread a third of the chutney onto each pastry rectangle. Divide the sausage meat into 3, roll into a long sausage and place on top of the chutney. * Brush the long edge of the pastry with egg, fold over the top and press the cut edges together at the side of the roll. Repeat until all three are made. * Brush rolls with egg and top with the seeds, cut each one in half and slash the tops with a sharp knife. * Place on a lined tray and bake in the oven at 190°C for 20-25 minutes until risen and golden. Hints and Tips: As an alternative at Christmas, replace the onion chutney with cranberry sauce. If you are feeling artistic, try plaiting the pastry and make this into one large sausage plait. 46-49.qxp_Layout 1 18/04/2023 08:52 Page 248 LINCOLNSHIRE TODAY * Whilst the sweet potato is cooking, drain the Opies cornichons and onions and finely chop using a blender. * Once the sweet potato has cooked, place into a large mixing bowl and allow to cool. Add the chickpeas and mash with a fork. Add the cumin, harissa paste, season and mix well. Place into the fridge for at least an hour. * Lightly flour a work surface and roll the pastry out. Cut the pastry length into two and spoon the cornichon and onion mixture down the centre of each length. Add the sweet potato on top of this. Roll the two lengths of pastry so you have two long sausage shapes and cut each into six. * Place on a baking tray with greaseproof paper, and brush with dairy free milk. * Sprinkle over the nigella seeds and bake for 20 minutes in the oven until golden brown. Allow to cool. Hints and Tips: Suitable for make-ahead and freezing. Defrost thoroughly and place in the oven to gently heat through before serving. Chickpea, Sweet Potato & Harissa Rolls (Vegan) Makes 12 Preparation time: 30 minutes (plus cooling time) Cooking time: 20 minutes Ingredients: * 2 Sweet Potatoes (or 1 x large) * 1 tin Chickpeas * 1tbsp Harissa Paste * 1 tsp Ground Cumin * 1 jar of Opies Cornichons and Onions * 1 sheet Puff Pastry (vegan) * 60ml Almond Milk * 1 tsp Nigella Seeds Method: * Preheat the oven to 180°C. Peel and chop the sweet potato into 1cm chunks and place onto a baking tray. Drizzle with olive oil, salt and pepper and bake until soft so that it can easily be mashed with a fork (about 20 minutes cooking).
