The menu varies from day-to-day with the chef’s specials, alongside regular meals. 40 LINCOLNSHIRE TODAY Halva with Pistachio & What to do: 1. Line a 20cm square tin with parchment paper. 2. Place the tahini, vanilla extract and salt in a large heatproof bowl. Add the sugar and water to a heavy-based saucepan and bring to the boil. Stir it once then leave it untouched to reach 245°F (you will need to use a sugar thermometer for this). 3. As soon as it reaches temperature, carefully pour it over the tahini mixture and stir until well combined and the mixture starts to thicken. As soon as this happens stop stirring, to avoid it becoming crumbly. 4. Transfer into the pre-prepared tin and smooth the top over using a knife. Sprinkle over the pistachios then drain the cherries well and stud them all over the halva. 5. Leave to cool to room temperature then refrigerate until chilled and set for at least 3 hours. Hints and Tips: Swap out the black cherries with cocktail cherries or slices of stem ginger in syrup. Serves 6 - 8 Preparation Time: 15 minutes (plus 3 hours chilling time) Cooking Time: 30 minutes Recipe Type: Gluten Free, vegan, sweet treats, home-made gifts You’ll need: 360g Tahini 1 tsp Vanilla Extract 1 tsp Salt 300g Granulated Sugar 75ml Water 75g Pistachios, toasted and roughly chopped 1 jar Opies Black Cherries with Kirsch Black Cherry FOOD & DINING LINCOLNSHIRE TODAY 41 Chocolate Covered Cherries Makes about 40 cherries Preparation time: 45 minutes Cooking time: 2 minutes Allergens: Dairy You’ll need: 375g Icing Sugar 60g Butter, softened 1 tbsp Milk ½ tsp Almond Extract 2 jars of Opies Cocktail Cherries, drained 340g quality Dark Chocolate Chips 2 tbsp Vegetable Fat (e,g, Trex) What to do: 1. Line a large baking tray with greaseproof paper. 2. In a bowl combine the sugar, butter, milk and almond extract. Knead until smooth and pliable then shape into balls around the size of a two pence piece before flattening into a disk. If the mixture gets too sticky, place in the fridge for 10 minutes to harden a little. 3. Place a well-drained cherry in the centre of the disk and wrap to fully enclose the cherry. Place on the baking tray, cover and chill in the fridge overnight. 4. In a microwave, melt the chocolate and vegetable fat in 15 second intervals, stirring in between until melted. 5. Submerge the cherries in the chocolate until fully coated then place back on the lined tray until set. 6. Store in an airtight container. Make it Vegan: Swap the butter for vegan butter and the milk for a plant based alternative. Ensure the dark chocolate is vegan friendly. T he heart of the season in Lincoln has in previous years been the Christmas Market, quickly growing from its modest beginnings as eleven stalls in Castle Square in 1982. Back then, it was the first German-style Christmas market in the UK, opened in honour of Lincoln’s twinning with the town of Neustadt. Now the concept of Christmas markets a lovingly adopted modern tradition that’s been taken up by cities all over the UK, from Leeds and Bath to Cardiff and Belfast. Unfortunately, the decision was made in 2023 to axe the Lincoln Christmas market over concerns surrounding overcrowding. There’s no arguing it didn’t bring huge crowds, but 44 Á44 LINCOLNSHIRE TODAY LINCOLN it seems the logistics of dealing with them proved too much for the city – and, in an ever-increasing litigious world where people are all too happy to sue and claim against anyone they can, the risks of continuing the market proved too great. It’s a shame to see the event end but the market was hardly the only thing that drew people to Lincoln, it was only the most well-known. The city still remains a premier shopping and entertainment destination, and there are a wide array of events taking place both in and around it. This year’s switching on of the Christmas lights is set to take place on the 28th of November and the Lincoln City Winter Art Festival takes place on the 30th of November. On the 14th November, the Lincoln Cathedral will be holding a screening of “The Snowman” in the cathedral nave accompanied by a live orchestra. The movie has been shown every year since 1982 but its author, Raymond Briggs, died this year, giving it a special sense of poignancy. The orchestra will play its most memorable song “Walking in the air” live to the audience. If you’re a history buff or just want to explore something special, the Lincoln Castle will be gearing up for the Christmas season from the 29th November – 23rd December, with fairground rides, snow machines, and its beautiful illuminated castle walk along the walls. Seeing the castle lit up with lights for Christmas is always an awe-inspiring image, connecting the Lincolnshire of medieval times to our own modern era. It’s not all about events and family activities, though. Lincoln is one of the best shopping destinations in the county and, even without the market, many of its independent boutiques will be gearing up with special deals and festive treats. Steep Hill remains a beautiful and exciting walk (if a little slippery when icy, so do 46 Á46 LINCOLNSHIRE TODAY LINCOLN © andrewscottphotography.co.uk take care) and is often lit up for Christmas. With its narrow streets and steep incline, it’s an incredible sight – especially as the sun sets and the tall buildings on either side light up. Further down, the high street is a bustling shopping paradise with busy crowds and festive decorations. As the sun sets proper, the city comes alive with revellers, carollers, partygoers and more. If you’re less interested in nightclubs, there are plenty of theatres with shows on around the city, and you can check our “What’s On” section at the back of the magazine for some shows being listed. However, it’s also worth checking the websites of the theatres as they’ll be running shows from the local university, colleges, and further afield. A great option for those looking to inject a little magic into Christmas without the busy crowds of the high street. While it obviously is a loss to not have the Lincoln Christmas Market, it’s easy nowadays to focus on the bad and forget the good. The loss of one treasured activity should never outweigh the joy of having so many others – and nothing says it’s gone for good. The market may come back in future years, as long as we all hold it dear.
